Description

A hearty and delicious Sausage and Tater Tot Breakfast Quiche featuring a crispy tater tot crust filled with savory breakfast sausage, fluffy eggs, creamy cottage cheese, and melted mozzarella. Perfect for a satisfying brunch or breakfast gathering.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat and Prepare Crust: Preheat the oven to 400 degrees F. Grease a 9-inch deep-dish pie dish with butter. Place the frozen tater tots evenly in the prepared pie dish and bake for 15 minutes until partially cooked and slightly crispy.
  2. Mash Tater Tots: Remove the partially baked tater tots and mash them to form an even layer covering the bottom and sides of the pie dish, creating the crust.
  3. Reduce Oven Temperature: Lower the oven temperature to 350 degrees F to prepare for baking the quiche filling.
  4. Cook Sausage: In a skillet over medium to medium-high heat, fully cook and crumble the ground breakfast sausage until browned and cooked through. Remove from heat and allow to cool slightly.
  5. Make Egg Mixture: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper. Stir in the grated mozzarella cheese and the cooked sausage to evenly combine all filling ingredients.
  6. Assemble and Bake: Pour the egg and sausage mixture evenly over the mashed tater tot crust in the pie dish. Bake for 30 minutes or until the center is fully set.
  7. Cool and Serve: Remove the quiche from the oven and let it cool for at least 5 minutes to set. Garnish with freshly chopped parsley if desired, then slice and serve hot for a satisfying breakfast.

Notes

  • You can substitute turkey sausage for a leaner option.
  • Use full-fat cottage cheese if preferred for a richer taste.
  • Ensure the tater tots are mashed well to create a stable crust layer.
  • Let the quiche cool slightly before cutting to maintain structure.
  • Fresh parsley garnish adds color and freshness but is optional.
