Description

Savory Onion Boil is a simple yet flavorful vegan-friendly dish featuring a whole onion roasted to caramelized perfection with a blend of butter, olive oil, and Cajun seasoning. This easy recipe offers a delightful combination of tender, sweet, and savory flavors that can be enjoyed as a side dish or a tasty snack.

Ingredients

Scale

Onions

  • 1 large Onion (Shallots make for a milder substitute)

Fats & Oils

  • 2 tablespoons Butter (Use vegan butter for a dairy-free version)
  • 2 tablespoons Olive Oil (Coconut oil can be used as a substitute)

Seasoning

  • 1 teaspoon Salt (Adjust according to taste)
  • 1 tablespoon Cajun Seasoning (Italian seasoning can be a milder option)
  • Optional Fresh Herbs to taste (Thyme or rosemary recommended)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Gather all necessary ingredients and a baking dish.
  2. Prepare Onion: Peel the onion and scoop out a small well at the top to hold fillings.
  3. Fill and Season: Place the onion on aluminum foil, fill the hollowed center with butter, drizzle olive oil over the top, and sprinkle with Cajun seasoning and optional fresh herbs.
  4. Wrap and Roast: Wrap the onion tightly in aluminum foil, place it in a baking dish, and roast in the oven for about 1 hour until the onion is fork-tender and caramelized.
  5. Broil for Finish: Unwrap the roasted onion carefully, drizzle additional butter over it, and broil for 5–10 minutes until it develops a golden brown crust.
  6. Serve: Allow the onion to cool slightly before serving. Pour the delicious juices released during cooking over the onion for extra flavor and enjoy.

Notes

  • For a dairy-free version, use vegan butter instead of regular butter.
  • Shallots can replace onions for a milder taste.
  • Adjust Cajun seasoning or substitute with Italian seasoning for a less spicy option.
  • Be cautious when unwrapping hot foil to prevent burns.
  • Serve as a side dish or a flavorful snack with crusty bread to soak up the juices.
