Ingredients
Scale
Dry Ingredients
- 2 cups all purpose flour
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1-2 teaspoons pumpkin spice (or a mix of ground cinnamon, ginger, allspice, and nutmeg)
- 1 teaspoon cinnamon
Wet Ingredients
- 3 large eggs
- 1 1/3 cup milk
- 1/4 cup maple syrup
- 3 tablespoons oil or melted butter
- 1 cup canned pumpkin (about 1 small can)
Instructions
- Combine Dry Ingredients: In a large bowl, stir together all the dry ingredients including the flour, brown sugar, baking powder, baking soda, salt, pumpkin spice, and cinnamon until evenly mixed.
- Mix Wet Ingredients: In a measuring jug or separate bowl, whisk the eggs, milk, maple syrup, melted butter or oil, and canned pumpkin until the mixture is smooth and uniform.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix until just combined. It’s okay if the batter is slightly lumpy; overmixing can make the waffles tough.
- Cook Waffles: Preheat your waffle iron according to the manufacturer’s instructions. Pour the batter onto the waffle iron and bake on medium heat a bit longer than usual waffles to ensure they are cooked through in the middle and crispy on the outside. Serve warm with your favorite toppings.
Notes
- Using canned pumpkin rather than pumpkin pie filling ensures the right flavor and texture.
- You can substitute pumpkin spice with a homemade blend of cinnamon, ginger, allspice, and nutmeg.
- For crispier waffles, try letting them cool on a wire rack instead of stacking immediately after cooking.
- Adjust sweetness by varying the amount of brown sugar or maple syrup.
- Waffles are best served fresh but can be frozen and reheated in a toaster or oven.
