Ingredients
Scale
For the Pancake Batter
- 1/4 cup cottage cheese (4% milkfat)
- 1 large egg
- 2 tablespoons all-purpose flour (or 2 1/2 tablespoons gluten free all-purpose flour)
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
For Cooking and Serving
- 1/2 tablespoon butter for frying
- Maple syrup, for serving
- Additional butter, for serving
Instructions
- Make Batter: Place the cottage cheese, egg, all-purpose flour, baking powder, and salt into a blender in that order. Blend the mixture until smooth and fully combined, creating a creamy pancake batter.
- Melt Butter: Heat a nonstick pan over medium-high heat for about a minute until hot. Add the butter to the pan and allow it to melt completely, coating the surface evenly.
- Cook Pancake: Pour all the batter into the pan, forming one large pancake. Let it cook undisturbed for 1 to 2 minutes until bubbles begin to form on the top surface and the underside turns golden brown.
- Flip and Finish: Carefully flip the pancake using a spatula. Cook for an additional 1 to 2 minutes until the other side is golden and the pancake is cooked through.
- Serve: Transfer the pancake to a plate and top it with butter and maple syrup or any other desired toppings. Enjoy immediately while warm.
Notes
- You can substitute gluten-free flour if needed to make the pancake gluten-free.
- Make sure the pan is properly heated to ensure an even golden crust.
- This recipe is ideal for a single serving; adjust quantities accordingly for more servings.
- Using a blender ensures a smooth batter, but you can mix by hand if needed.
- Butter adds rich flavor, but can be swapped for a non-dairy alternative if desired.
