Instructions
- Brown the Beef: In a large skillet over medium heat, cook the ground beef until fully browned. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds more. Drain any excess grease for a leaner dish.
- Transfer to Slow Cooker: Move the cooked beef mixture to the slow cooker. Add the diced potatoes, drained kidney beans, diced tomatoes with their juices, frozen corn, and beef broth.
- Add Seasonings: Sprinkle in the chili powder, paprika, salt, and black pepper. Stir thoroughly to evenly distribute the seasoning throughout the mixture.
- Slow Cook: Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until the potatoes are tender when pierced with a fork.
