Melon Base

  • 1 medium ripe honeydew, cubed
  • 2 limes, zested
  • 2/3 cup lime juice (about 4 medium limes)
  • 1/2 cup loosely packed mint leaves

  • Honeydew balls (for garnish)

Instructions

  1. Blend the sour melon base: In a blender, combine the cubed honeydew, lime zest, lime juice, and mint leaves. Blend on medium-high speed for about 2 minutes until the mixture becomes smooth and frothy, ensuring the flavors are well incorporated.
  2. Strain and store: Pour the blended mixture through a fine mesh sieve or use a nut milk bag over a bowl to strain out the pulp, creating a smooth concentrate. Transfer the strained sour melon base into a jar and refrigerate until ready to use.
  3. Make the spritzer: When ready to serve, fill a glass halfway with ice and garnish with lime wedges, honeydew balls, and fresh mint leaves. Pour 1/2 cup of the sour melon base over the ice, then top with 1/2 cup of sparkling water or club soda. Stir gently to combine and enjoy immediately.
