  • 1 package (1.75 oz) pectin


Instructions

  1. Combine Ingredients: In a large pot, combine the chopped strawberries, honey, jalapeños, and lemon juice. Cook over medium heat until the mixture begins to bubble, about 5 minutes.
  2. Add Sugar and Pectin: Add the granulated sugar and pectin to the pot, stirring constantly until fully dissolved, about 2 minutes.
  3. Boil the Mixture: Increase the heat to high and bring the mixture to a rolling boil. Boil for 1 minute while stirring frequently to ensure even cooking.
  4. Skim Foam: Remove the pot from heat and skim off any foam that forms on the surface to ensure a smooth texture in the jam.
  5. Jar the Jam: Pour the jam into sterilized jars leaving about 1/4 inch of headspace at the top. Seal the jars tightly with lids.
  6. Process in Water Bath: Process the jars in a boiling water bath for 10 minutes to ensure proper preservation and safe storage.

Notes

  • Removing jalapeño seeds reduces the heat but retains the flavor, adjust the quantity based on your spice preference.
