This Super Yummy Chicken Salad is a quick, creamy, and flavorful dish combining tender chicken, sweet grapes, crunchy celery, and roasted cashews, all tossed in a tangy Greek yogurt and mayo dressing with a hint of Dijon mustard and spices. Perfect for sandwiches, wraps, or as a standalone salad, itโs a versatile and satisfying meal ready in just 15 minutes.

Dressing
- 1/2 cup plain Greek yogurt (2% milkfat or higher preferred)
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 teaspoons sugar (adjust to taste; honey can be used as alternative)
- 3/4 teaspoon kosher salt
- 3/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
Salad Mix-ins
- 2 1/2 cups cooked chicken, cubed or diced (rotisserie chicken breast recommended)
- 1 1/2 cups red grapes, sliced
- 1 cup finely diced celery (about 2-3 stalks)
- 1 cup roasted cashew halves and pieces
- Optional seasonings: dried herbs, fresh herbs, additional salt and pepper; freeze-dried chives and white pepper suggested
Instructions
- Make the Dressing: In a bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, sugar, kosher salt, onion powder, and garlic powder until smooth. Taste the dressing and adjust seasoning if needed, keeping in mind it should be flavorful and slightly salty since it will be mixed with other ingredients.
- Toss the Salad: In a large mixing bowl, combine the cooked chicken, sliced grapes, diced celery, and roasted cashews. Pour in as much dressing as you like and gently toss to coat all the ingredients evenly.
- Season to Taste: Taste the mixed salad and adjust the seasoning if desired. Stir in additional herbs, freeze-dried chives, white pepper, or more salt and pepper to enhance the flavor according to your preference.
- Serve and Store: Enjoy the chicken salad cold. Serve it on a whole wheat wrap, as a lettuce wrap, sandwich filling, on toast, or with crackers. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
