Ingredients
Scale
Vegetables
- 4 medium Potatoes (or cauliflower for a lighter option)
- 2 cups Kale (or substitute with cabbage)
- 1 cup Leeks (can be replaced with green onions)
- 2 cloves Garlic
Dairy Alternatives & Fats
- 1 cup Almond Milk (unsweetened preferred)
- 2 tablespoons Vegan Butter (or regular butter for non-vegan)
Spices & Seasonings
- 1/4 teaspoon Nutmeg (essential for flavor)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Boil Potatoes or Steam Cauliflower: Cook the potatoes in boiling water for about 15 minutes until fork-tender. If using cauliflower, steam for 6-7 minutes until soft.
- Prepare the Base: Drain the cooked potatoes or cauliflower. In a large skillet, heat olive oil and sauté the leeks for 3-5 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Cook the Greens: Add kale to the skillet along with a splash of water. Cover and sauté for about 3 minutes until the kale wilts and becomes tender.
- Season: Sprinkle nutmeg, salt, and pepper over the kale mixture. Continue cooking for an additional 5 minutes to meld the flavors and soften the greens.
- Mash and Combine: In a bowl, mash the boiled potatoes or cauliflower with almond milk and vegan butter until creamy and smooth.
- Serve: Spoon the creamy colcannon into bowls and optionally top with extra vegan butter for enhanced richness. Serve warm and enjoy the comforting flavors.
Notes
- For a lower-calorie option, substitute potatoes with cauliflower.
- Kale can be swapped with cabbage for a traditional colcannon twist.
- Leeks and green onions are interchangeable depending on availability.
- Use unsweetened almond milk to maintain savory flavor balance.
- Adjust seasoning according to taste preference.
- Can be served as a main dish or side.
