Instructions

  1. Prepare the Pan: Line a 9-inch pan or a similarly sized dish with parchment paper and set it aside to prevent sticking.
  2. Melt the Butter: Place the vegan salted butter in a saucepan and melt it over medium heat until fully liquefied.
  3. Melt the Marshmallows: Add the 400g of vegan marshmallows to the melted butter and stir continuously with a spatula over low to medium-low heat. Keep stirring until the marshmallows are completely melted into a smooth mixture. Maintain the heat on medium-low to avoid the mixture becoming tacky and difficult to work with, as vegan marshmallows require more gentle melting than regular ones.
  4. Add Flavorings and Mini Marshmallows: Once melted, stir in the vanilla extract thoroughly until the mixture is smooth, then remove the pan from heat. Quickly stir in the 50g of vegan mini marshmallows, distributing them evenly, and transfer the mixture to a large mixing bowl if the saucepan is not large enough.
  5. Combine with Rice Cereal: Add the 180g of vegan rice cereal to the marshmallow mixture. Using a spatula, gently fold the cereal in until fully coated, working as quickly as possible to avoid hardening.
  6. Press into the Pan: Spoon the combined mixture into the prepared pan. Use a spatula or spoon to press it firmly and evenly into the base and corners to create a compact layer.
  7. Cool and Slice: Allow the treats to cool at room temperature for 15-20 minutes until set. Slice the cooled mixture into 12 equal portions. Optionally, top each piece with extra vegan marshmallows and vegan sprinkles for a festive look.
  8. Storage: Store the treats in an airtight container at room temperature where they will keep fresh for 2-3 days.
